Quick Spaghetti and Meatballs #Recipe

I’m getting horribly bad at meal prep lately. Of course I’m getting bad at preparing anything it seems as I’m so easily distracted and seem to have an on going “to do” list. I’m sure that it’s something to do with that active little toddler I have and with all the keep up for the older darling in school!

Age may make up other factors leading into my dinner madness. Though still I am determined to feed a wholesome meal most of the time. So my last minute spaghetti and meatballs deemed a bit mad but what the heck. I’ve done the store bought meatballs in a bind which works fine but really the real deal tastes so much better. I had just bought a block of Parmesan so I was craving some homely pasta I guess. The sauce itself was just a jar of passata with some garlic wine and seasoning. Key to quicker cooking was not to make balls too big.

Meatballs
  1. 1/2 bread crumbs
  2. 1/2 cup milk
  3. 1lb ground sirloin or lean ground beef
  4. 2 garlic cloves minced
  5. 1/2 tsp paprika and oregano
  6. Salt and pepper to taste.
Sauce
  1. Tbsp olive oil
  2. 2 garlic cloves minced
  3. 1 tsp oregano,
  4. Salt and pepper to taste
  5. 1/2 cup red wine
  6. 1 jar passata
Pasta
  1. spaghetti 400g
  2. 1 tbsp salt
  3. Lots of good Parmesan cheese
Instructions
  1. Preheat 400'F
  2. Line a cookie sheet with parchment paper.
  3. Roll small 11/2 inch balls (think Ikea) Bake for 20 min.
  4. Meanwhile, heat olive oil over med heat add garlic.
  5. Cook for minute then add seasoning.
  6. Add red wine and turn up heat slightly until mostly evaporated.
  7. Add passata heat thru then put it to simmer. Thin with about 1/2 cup water. Usually just rinse jar with water and pour in.
  8. Toss meatballs in sauce to coat when done they'll add flavour to sauce while you work start on pasta.
  9. Bring a large pot of water to boil with 1 tbsp of salt added to water.
  10. Add pasta when rolling boil, cook to al dante, drain but keep aside some of the pasta water, about 1/2 cup Return pasta to pot add about 1/2 cup sauce and reserved pasta water. Combine and dish out.
  11. Pour more sauce and meatballs on top.
  12. Don't forget to top with cheese!

  1. We all have the same problem, wait until your in your 50’s and your sick and tired of the same old thing and try to healthier, we sit there thinking so long it’s 9 pm before we eat the same old thing because we couldn’t find anything new, hehe!
