I was given an ebook copy of the Gluten Free Cookbook: 60 Easy Gluten Free Recipes for a Gluten Free Diet (Volume 1) to review, however all opinions expressed are my own.

This cookbook has 60 delicious and easy gluten free recipes, tasty recipes for the whole family (even kids will love), and vegetarian alternatives for non-meat eaters. The recipes are for breakfasts, snacks & wraps, salads, soups & stews, main dishes, vegetables, desserts, and smoothies. It is published by Antares Press, copyright in 2015.

The cookbook starts with a few pictures of some of the food you can make using the recipes in the book. Next is an introduction that explains what gluten is, where it can be found, and who should avoid it. It also mentions that 18 million Americans are gluten intolerant!  I had no idea that so many people were affected by this!

Chapter 1 is “Breakfasts.” A lot of the breakfast recipes include chicken.  I never thought about eating chicken for breakfast before. A few of the recipes are Fiber Bacon and Eggs – made with organic eggs, Chicken Stir-Fry, and Cilantro Turkey Burgers.

Chapter 2 is “Snacks & Wraps.” A lot of the recipes include organic meat and use lettuce as a wrap. One of the recipes that sounded good to me is G-Free Chinese Chicken Lettuce Wraps. It is made with chicken, carrots, and almonds.

Chapter 3 is “Salads.” It has a nice variety of meats and the type of lettuce/greens used in the salads. Some recipes are Gluten Free Greek Salad and Grilled Taco Salad.

Chapter 4 is “Soups and Stews.” It has recipes with meat and vegetables, and also just vegetables. Some recipes are Sweet Potato – Lime Soup and Chicken Soup. I thought the Beef & Vegetable Stew sounds like something my family would like.  It’s made in the slow cooker.

Chapter 5 is “Main Dishes.” It has recipes with meat and vegetables, coconut flour and oil, and some organic ingredients. A lot of the recipes are high in sodium, so we couldn’t eat them, although the Chicken Nuggets recipe sounds good.

Chapter 6 is “Vegetables.” There are recipes with hot vegetables, salads, and some with nuts. Some recipes are Greek Salad and Nutty Summer Squash, which I think sound like something I’d like to try.

Chapter 7 is “Desserts.” There are fruit and cookie recipes. Some are made with almond flour, organic eggs, and coconut milk. Some recipes are Gluten Free Chocolate Bars and Vanilla Madeleines.

Chapter 8 is “Smoothies.” Some are made with spinach and some ingredients I didn’t recognize, like kombucha. Some recipes are Banana Spice Smoothie and a Pear Green Tea Smoothie.

At the end is volume, weight, and oven temperature conversions.

I learned a lot from this cookbook about what it means to eat gluten free.  I also learned some new ingredients I’ve never heard of. The recipes all have great directions, and they seem like something I would be able to cook. I have a friend that recently had to go on a gluten free diet, and it’s nice to know there’s a cookbook with great recipes for her.
